Dave Hatcher, PhD

Research Scientist

Grain Research Laboratory

Dave Hatcher, PhD, has been with Canadian Grain Commission's Grain Research Laboratory since 1984. He has been actively involved in the investigation of biochemical components such as the gluten proteins and enzymes responsible for influencing wheat products. Dave Hatcher has been associate editor for Cereal Chemistry since 1995. From 1997 to 2001, he served as chair of the American Association of Cereal Chemists' (AACC) Asian Products Technical Committee. Since 1998, he has been chair of AACC's Enzyme Technical Committee. Recently, his attention has been primarily devoted to understanding biochemical components as they relate to noodle quality.
