Garam Masala (mixed balancing spices)

Ingredients:

1/2 cup black cardamom seeds
4-6 cinnamon sticks (broken into small pieces)
1/4 cup whole cloves
1/4 cup black peppercorns
1 tsp nutmeg powder
4-5 bay leaves

In a small heavy bottomed frying pan roast all the ingredients one at a time on medium heat, stirring constantly until the spices are dry and crisp.

Grind to a fine powder.

Store in an airtight jar.

Garam masala will keep for 6-12 months in refrigerator.
