Maple-Syrup Salmon

This salty/sweet combination, made with two of Canada's most renowned food products, maple syrup and fresh fish, is sure to please. It serves four.

4Salmon Fillets (6 oz or 180g each)
1/3 cupPure maple syrup
½ cupWater
4 tspGinger root, finely chopped
2 clovesGarlic, minces or pressed
PinchSalt
PinchPepper

Over medium heat, combine the maple syrup, water, ginger and garlic. Cook over the heat until it thickens and is reduced to about ½ a cup (125 mL.) Allow the mixture to cool and turn on the broiler.

Then dip the salmon steaks in the sauce, ensuring that they get completely covered. Sprinkle a little salt over them as well.

Leave the steaks in the broiler. After about six minutes, take them out and brush any remaining sauce all over the steaks. Then put them back in for another six minutes.
