| Bison producers are looking forward to increased slaughter capacity in the province. Construction is underway on the Canadian Premium Meats plant in Lacombe, and with the expansion of Sunterra Meats in Innisfail operating successfully, bison producers have more options for processing their animals. "Bison market prices are returning, not as strong - but there is good production, good products going to good markets at reasonable prices," says Roland Eben-Ebenau, past chair of the Bison Producers of Alberta. "What is needed now is to streamline the system and make it work." Part of streamlining the system involved these new processing plants and an increased slaughter capacity. These are major projects and they are now well underway, a real anticipated benefit for the industry. Added benefits to the industry will also be realized when these plants get EU certification.
