As part of this Department's commitment to ensure uniform, consistent application of the many standards and methods used by inspectors in the assessment of final products, it is my pleasure to make available to you the Fish Products Standards and Methods Manual.

This manual represents a consolidation of the many standards, tolerances and methodologies used to determine the acceptability of fishery products to the requirements of the Fish Inspection Regulations. The intent is to describe clearly and precisely the definitions, examination criteria and methods by which inspectors examine the various fishery products which they encounter in their day-to-day inspection activities.

This manual will serve as the national communication to all Departmental inspectors of the standards which must be used in the inspection of fishery products for compliance to Canadian standards. Producers and importers alike should also find the manual most useful in that it describes for them the criteria by which their products are evaluated by inspectors. In line with the Department's commitment to openness, the manual will be made available to all its clients.

The consolidation of fish product standards for the major products produced or imported into Canada remains a continuing and important Departmental objective. The manual will be expanded as other product standards are reformatted or revised as appropriate.
