Key Statistics on Canada's Small and Medium Sized Food and Beverage Processing Plants
In 1993, there were 3008 food processing establishments employing 138 thousand production workers. The Value of Shipments of Goods of Own Manufacture was $40 billion.
By 1997, there were 3072 establishments, employing 153 thousand workers, who produced $50 billion of shipments, and $16 billion of Value Added. In addition, there were 199 manufacturing soft drinks, distilled liquor, wine and beer. These plants employed 11.7 thousand production workers and produced $7 billion in shipments.

These data indicate that 11% of Food Processing shipments come from 2139 plants (70% of the plants), or that 89% of shipments come from the large plants at the upper tail of the distribution, or 30% of the plants. Similarly, in the Beverage Sector, 4.2% of shipments come from 60% of the plants. Industry sectors that have a more skewed distribution than these averages are Meat & Poultry, Fruit & Vegetables, Dairy, Cane & Beet Sugar & Confectionery, and Breweries.
Shipments from Food Processors are dominated by Meat & Poultry (28%), Dairy (16%), Cereals, Flour Mixes and Feeds (13% - in turn dominated by the Feed Industry). Shipments from the Beverage Sector are dominated by Breweries (47%) and Soft Drinks (36%), but the Distillery Sector dominates in terms of exports.
