Can benzoic acid and/or its salts be used in salted fish roe/caviar

though these products are pasteurised? |
Answer:

The term "cold processed" indicates there
wasn't any heating process involved in the manufacture of the product.
While a salted-fish roe or caviar may have been "cold processed" when
benzoic acid and/or its salts were added, a pasteurisation treatment afterwards
made the final product "heat treated". Such product becomes
ineligible under the provisions of B.21.021 to contain these preservatives.
This interpretation of the Regulations has been confirmed by Health
Canada. |
