Surprise Cookies

Ingredients:

  • 1/2 cup (125 mL) softened margarine
  • 1/4 cup (50 mL) granulated sugar
  • 1 egg
  • 1 cup (250 mL) whole-wheat flour
  • 1/2 tsp (2 mL) baking powder
  • 1 cup (250 mL) grated medium cheddar cheese
  • 2 cups (500 mL) bran flakes
  • 3/4 cup (175 mL) raisins, nuts, and/seeds

Directions:

Preheat oven to 350 degrees F (180 degrees celcius)

In a large bowl, cream butter and sugar. Beat in egg. Stir in flour and baking powder. Mix in remaining ingredients.

Drop batter from a teaspoon onto greased cookie sheet. Bake 12 minutes or until golden brown. Transfer to racks to cool.

Excellent as a breakfast food, along with a glass of milk and fruit rich in vitamin C, such as an orange, grapefruit, strawberries, cantelope, or kiwi.
