Chunky Chicken Sandwiches

A light snack or a hearty lunch
Ingredients:
- Boiled Chicken Breasts (This also works with leftover roast chicken or unseasoned chicken)
- A quarter of an onion, minced
- Pickle Relish, to taste
- Mayonnaise
- Salt and Pepper to taste
- 3 toasted slices of brown bread
- Slices of tomato and cucumber
- Lettuce
Directions:
Shred the chicken breasts into short (about 2 cm long) and thin shredded pieces. This recipe works perfectly with leftover chicken or turkey.
Mix the chicken, minced onion, and some relish in a bowl. Then, mix in some mayonnaise, enough to coat the entire mixture. Add salt and/or pepper to taste.
Toast the 3 slices of bread. On the two bottom slices, place an even layer of the chicken mixture on top, followed by the lettuce and slices of tomatoes and cucumbers. Place the last slice on top. You should have a slice of bread, then a layer of the filling, a slice of bread, a layer of the filling, and a final slice of bread. Cheese may also be added for extra flavour (also fulfills another food group!).
And there you have your Chunky Chicken Sandwiches! These sandwiches go perfectly with some healthy, baked potato wedges and a glass of orange juice. Enjoy!
