Christmas Eve

My family celebrates Christmas, but I think Christmas Eve is much more special. My immediate family gets together and spends the day cooking (appetizers, clam chowder, chicken wings, and dessert), eating, and laughing. Sometimes we go to our cabin, go outside to skate or go sledding, but the important thing is that we can get away from the stores and the craziness that the holidays bring and just be together. Once we've eaten all we possibly can, it's time to watch National Lampoon's Christmas Vacation. We finish off the evening by opening up one small present each, and then it's off to bed to rest up for a busy Christmas day with other family members.

Italian Bread Wedges

Dough:
2 cups flour
1 teaspoon salt
1 tablespoon oil
1 tablespoon instant yeast (or 1 small package)
1 teaspoon sugar
1 cup warm (not hot) water

Mix dry ingredients, then add water and oil. Knead together to mix all ingredients and shape into a ball. Cover the bowl with a tea towel or paper towel and leave in a warm place to rise for about 20 minutes. Press the dough onto a greased pizza pan or cookie sheet. Preheat oven to 400 F.

Topping:
¼ teaspoon salt
½ teaspoon each: oregano, garlic powder, thyme (or any other spices of your choosing)
1/3 cup Italian salad dressing
½ cup grated mozzarella cheese
¼ cup parmesan cheese

Mix salt and spices into salad dressing. Brush over dough. Sprinkle with cheeses. Bake for 15 minutes in a 400 F oven.

  • You may substitute the variety of spices and cheese to your liking.

These bread wedges are great with pasta, lasagna, soup or on their own. Enjoy!
