Christmas

My family loves to celebrate Christmas on December 25. Although we don't attend church regularly, we still believe in the spirit of togetherness, and we visit to sing Christmas carols, do lots of holiday-inspired cooking (cherry cake, cookies, homemade eggnog, pudding, and of course turkey with all the trimmings!), and exchange gifts. Since I was a little girl, we've always opened one gift on December 24, Christmas Eve, to tide us over until the morning, and even though I'm older now, this year will be no exception!

Here's a recipe I recently tried out ? it's not extremely "Christmassy", but it is great for having after being outside in the cold or if you're tired of turkey leftovers ? and it's easy too!

Onion Soup

1 tsp. butter
2 cloves of garlic, chopped finely
1 container Campbell's beef broth (500 ml)
1 container Campbell's chicken broth (500 ml)
1 large onion, cut into rings
Pepper (to taste)
Grated old cheddar cheese (optional)
Pieces of baguette (cubed, optional)

Put butter into a saucepan, and melt. Lightly brown the garlic. Add the beef and chicken broth, the onion pieces, and pepper. Bring to a boil and then remove from heat. Top with grated cheese and baguette pieces just before serving. Refrigerate unused portions.
