Bombproof Baked Macaroni Casserole

March 2005

Ingredients:

  • 1 small onion, chopped
  • 1 1/2 cups uncooked elbow macaroni
  • 1 cup cubed cheddar cheese
  • 1 cup water
  • 1 tsp. salt and pepper to taste
  • 1 can(28oz/796mL) diced tomatoes
  • 1 cup bread crumbs*
  • 1 tbsp butter

Directions:

  • Dump all the ingredients except the bread crumbs and butter into a well-greased dish. Yes, everything. Yes, just like that. Stir well.

  • Cover the casserole with a lid (or foil wrap) and bake at 350 F for 1 h.

  • Meanwhile, melt the butter in a small skillet over medium heat.

  • Add the bread crumbs and cook, stirring, for 8 to 10 min, until the crumbs are lightly toasted.

  • After the casserole has baked for 1 hour, remove the lid and sprinkle the buttered crumbs over top.

  • Return to the oven under the broiler for 3 to 5 min until browned.

*The bread crumbs are not necessary but add a nice touch.
