Peanut Butter and Banana Wraps

March 2005

My mother makes the same thing for lunch everyday. I believe that she does so because it is quick, easy, compact, portable, and healthy. Here is the recipe:

Ingredients:

  • 1 Tablespoon Peanut Butter
  • 1 medium banana
  • 1 large tortilla

Directions:

  • Remove tortilla from package;
  • Take one tablespoon of peanut butter and spread evenly across the tortilla shell. To avoid "leakage", leave approximately 2-4 cm on each edge;
  • Slice up the banana (after peeling of course) into cylindrical disks and place in the centre of the tortilla;
  • Fold both ends of the wrap up and roll the remaining wrap

Variations: replace peanut butter with another nut butter (almond butter, cashew butter, etc) or even refried beans! Other fruit may also work well (an apple chopped up very small for example). Also, try tortillas other than white (sun dried tomato, pesto, whole wheat, sprouted grain, etc)
