Salmon and Egg Omelette

Ingredients:

  • 2-4 Eggs
  • A can of Salmon
  • Diced onions, green peppers, tomatoes and mushrooms *
  • 1 tsp of butter

* if desired, you may change this to include your favourite vegetables

Directions:

Drain and flake salmon. Beat eggs in a bowl and add vegetables and butter. Set heat on medium and pour eggs and vegetables into a non-stick pan. Shortly after, add salmon onto the top of the eggs and vegetables (do not stir). Let eggs cook, flip over and wait until the bottom is fully cooked. Fold omelette in half, season according to taste and enjoy.
