1. FACILITY REQUIREMENTS FOR WORK AND INSPECTION STATIONS:

  • Establishment workstations listed below and CFIA on-line inspection stations require a minimum 2000 lux, of such a quality as to not distort the normal colour of meat products, measured at the level of the carcass cavity as per sub section 2.5.4, Chapter 2, CFIA Meat Hygiene Manual of Procedures.
  • Establishment workstations where carcasses are removed for off-line reconditioning and/or condemnation require facilities or equipment to hold carcasses to prevent cross-contamination between the retained carcasses. All establishment employees trimming carcasses require a minimum lighting of 540 lux and employees trimming carcasses with pathology lesions require access to an on-line knife sanitizer.
  • CFIA on-line stations require adjustable stands or stools with adequate on-line space proportional to the line speed (as specified in the remainder of this document), and which satisfy ergonomic requirements as determined by the VIC.
  • Establishment employees may use CFIA Inspection Stations whenever not in use by CFIA, provided that such use in no way interferes with CFIA use of their designated on-line space.
  • Shackles shall be colour-coded or marked in an equivalent manner to readily indicate which carcass and viscera pack corresponds to which detector if the establishment operator desires feedback from CFIA as to which establishment detector(s) are missing specified defects. Defect detectors must be able to readily identify which carcasses/viscera they are responsible to examine.

2. PRESELECTION

2.1 Carcass Defect Detectors (referred to as Preselectors under CPIP)

Same number as required under CPIP, plus recommend room for one more if desire to increase line speed (1 - 3 accredited establishment employees). On-line space is required for each defect detector work station.

2.2 CFIA Station for Accreditation of Establishment Trainers

On-line space (1 metre), downstream from carcass defect detectors and prior to venting machine, for CFIA staff to test / accredit / reaccredit the establishment trainers as carcass defect detectors.

2.3 CFIA Carcass Inspector (Alternate Location for 3.10.)

  • On-line space (1 metre), downstream from carcass defect detector(s) and prior to venting machine, for CFIA inspector to back up the carcass defect detector(s) during the trial period (2nd) phase of MPIP implementation;
  • May be combined with 2.2.

2.4 CFIA Veterinarian

  • Off-line space behind the carcass defect detectors for examining carcasses with suspected generalized pathology;
  • Access to on-line hand-rinsing facilities, e.g., strategically positioned gooseneck.

3. POST EVISCERATION

3.1 Cavity Defect Detectors (referred to as Presenter / Detectors - Internal Cavity under CPIP)

Same number as required under CPIP, plus recommend room for one more if desire to increase the line speed (usually require space for 3 - 5 company employees). On-line space is required for each defect detector work station.

3.2 Presentation Tests

  • On-line space of 0.75-1.0 metre, at a location where presentation of carcasses and their corresponding viscera can be assessed
  • May be combined with 3.3.

3.3 CFIA Station for Accreditation of Establishment Trainers

On-line space (1-1.5 metres), downstream from cavity defect detector(s) and prior to trimming the carcass or harvesting the viscera. Required for CFIA staff to test/accredit/reaccredit the establishment trainers as cavity defect detectors. Longer space required proportional to line speed, e.g., examine cavity and abdominal opening area for every 5th carcass.

3.4 Viscera Defect Detector (previously referred to as Presenter/Detectors-Viscera under CPIP)

Space for one company viscera defect detector downstream from cavity defect detector(s), or if viscera separated from carcass, then optional location upstream from cavity defect detectors (advantage for Airsacculitis). On-line space is required for each defect detector work station.

3.5 CFIA Station for Accreditation of Establishment Trainers

Off-line space, behind and downstream from viscera defect detector and prior to viscera harvesting, for CFIA staff to test/accredit/reaccredit the establishment trainers as viscera defect detectors.

3.6 Helper/Trimmer

On-line space for one company employee to remove signalled carcasses and if time permits, trim localized lesions from carcasses.

3.7 CFIA Veterinarian

  • Off-line space behind the helper/trimmer for examining carcasses with suspected generalized pathology;
  • Access to on-line hand-rinsing facilities, e.g., strategically positioned gooseneck.

3.8 CFIA ISO-based Tests for Listed Pathology & Processing Defects

  • CFIA inspector requires on-line space, proportional to the line speed, (1 - 2 metres), after cavity and viscera detection, but prior to harvesting the viscera. Longer space required proportional to line speed - must examine exterior, cavity and viscera, e.g., every 3rd or 5th carcass;
  • Carcasses shall be synchronized to their corresponding viscera with both readily accessible to the inspector throughout the length of the inspection station;
  • 2,000 lux lighting with requisite colour rendering index;
  • ergonomically designed adjustable stand satisfactory for the range in size of the inspectors; and
  • May be combined with 3.3., 3.5., 3.9., or 3.10.

3.9 CFIA Viscera Inspector

  • On-line or off- line space, preferably immediately downstream from, or just behind, the company viscera detector. Station required during the trial period (only) to back up company viscera defect detectors until they are fully accredited and the establishment has passed a CFIA HACCP-MPIP system compliance and verification review.;
  • If on-line, may be combined with 3.3., 3.5., 3.8.

3.10 CFIA Carcass Inspector (alternate location for 3.3)

On-line space (1 metre), downstream from carcass defect detector(s), but prior to carcass trimming, for CFIA inspector to back up the carcass defect detector(s) until sufficient establishment employees are accredited/reaccredited as carcass defect detectors under MPIP.

4. CFIA POULTRY PRODUCTS INSPECTOR

One (1) per establishment or at patrol frequency dependant on types and volume of further processing operations. Requires use of FPS stations at randomly selected times.
