This image shows a flow chart of Carcass Subgroup test. It has four boxes going across the top that flow down to other boxes.

The box on the top left says:CUSUM less than action number and subgroup absolute limit not exceeded. This box leads to a box that says: Hourly random sampling continues.

The box second from the left says:CUSUM reaches action number and/or presence of visible fecal material. This box leads to a box that says: Process action. This box flows to a box that says: Stop random sampling of affected category (processing of trimming) but continue random sampling of the other category. If new actions are taken because of a trimmable lesion/condition being found, follow steps below but test only for trimming problem.

This box leads to two boxes. The box on the left says: Retest at prechill location, and this box leads to two boxes. The box on the left says Subgroup total exceeds tolerance or presence of visible fecal and this box can flow back up to Retst at prechill location. The box on the right says: 2 consecutive pre-chill tests equal to or less than tolerance and absence of visible fecal contamination. This box can lead to three boxes. The first one says: Resume random prechill subgroup testing for category of defects involved. The second one says: Reset CUSUM at start number if not already less than start number. The third one says: Identify product in chiller to be tested.

The box on the right says: Retest at postchill station. Subgroup test at least every 15 minutes using prechill finished product standards on all production in chiller. This box leads to two boxes. The box on the left says: Subgroup total exceeds tolerance or presence of visible fecal. This box leads to a box that says: Product rework. This box leads to a box that says: retest. This box leads to two boxes. The box on the left says: Subgroup less than or equal to tolerance and absence of visible fecal contamination. This box leads to a box that says: Release product. The box on the right says: Subgroup total exceeds tolerance or presence of visible fecal contamination. This box leads back of to Product rework. The box on the right says: Subgroup total less than or equal to the tolerance and absence of visible fecal contamination. This box leads to a box that says: Continue sampling for product in chiller. This box leads to a box that says: Stop sampling from when product in chiller is identified as meeting standards.

The box second from the right says: Trimmable lesion/condition found. This box leads to a box that say: Retest for trimmable lesion/condition. This box can lead to two boxes. The first one says: Lesion/condition found, which then leads to process action. The second box says: No lesion/condition. This box leads to a box that says: Hourly random sampling continues.

The box on the top right says: Subgroup absolute limit exceeded. This box leads to box that says: Check if any of the last 5 subgroups had a CUSUM greater than start number. This leads to a box that says: Yes, and a box that says: No. The "Yes" box leads to a box that says: process action, while the "No" box leads to a box that says: Retest. This box can either lead to a box that says: Subgroup total exceeds tolerance, which in turn leads to process action, or it can lead to a box that says: Hourly random sampling continues.
