Question:

What are the requirements for the U.H.H.T of molluscs and echinoderms from the harvest site?

Answer:

The use of ice or mechanical refrigeration is not required for the transport of bi-valve shellstock such as mussels, clams or oysters from the harvest site to the processing plant when the duration of transport is less than two hours; however, the shellfish must be protected from exposure to the adverse environmental conditions (e.g., hot sun in summer, cold in winter) and contamination (e.g., birds). This policy also applies to the transport of gastropodian molluscs (i.e., whelks, periwinkles) and to echinoderms (i.e., sea urchins)

This decision reflects the recommendation (May 1992 - Meeting) of the Committee of Shellfish Program coordinators from all regions, who were concerned about unacceptable bacteriological growth or deterioration as a result of the duration of transportation and ambient temperatures or conditions.

Note: Policy amended 09/01/97 to include gastropods and echinoderms
