Saskatchewan's central location in the prairies provides easy access to processing plants. There are nine federally-inspected, seven provincially-inspected, and approximately 75 health-inspected meat processing plants in Saskatchewan.

The value of Saskatchewan pork exported in 2004 was about $94 million. In 2005, that number grew to $107 million.
