Florentine Fillets(Microwave Recipe)

Ingredients:

sole fillets, fresh or thawed*
frozen chopped spinach
pimento cream cheese
butter
flour
chicken broth
salt and pepper, dash
paprika
1 lb

1/2 cup
1 tbsp
1 tbsp

Florentine Fillets

 
Method:
Place spinach in a shallow microwave dish.  Cover and microwave at HIGH for 4  minutes. Separate spinach; cover and microwave at HIGH for 3 minutes.  Drain well and spread on bottom of dish. Season fish. Spread half the cream cheese, cut in pieces, on fillets. Roll fillets and arrange over spinach. Cover and microwave at HIGH for 6 minutes. Let stand covered. Meanwhile, melt butter and blend in flour. Add broth; cover and microwave at HIGH for 2 minutes. Stir and add remaining cheese. Cover and  microwave at HIGH for 2 minutes. Season to taste and stir. Pour sauce over fish. Sprinkle with paprika. Cover and Microwave at HIGH for 2 minutes. Let stand covered 2 minutes.
