Donairs have been linked to three separate outbreaks of E. coli O157:H7 in Canada since 2004, with a total of approximately 100 confirmed or suspected cases of foodborne illness. The Federal/Provincial/Territorial Donair Working Group was formed in 2005 to evaluate the current procedures for processing donairs in Canada, evaluate current research and existing guidance to industry, identify the foodborne illness risks and develop recommendations for the safe processing, cooking and handling of donairs.

The FPT Donair Working Group has developed recommendations for industry and is inviting stakeholders to provide input on the proposed options to increase the safety of donairs and similar products. This consultation also seeks to increase stakeholder awareness and understanding of the risks associated with the processing, cooking and handling of these products.

  Federal/Provincial/Territorial government departments, Regional Health Authorities, Foodservice establishments, Manufacturers of donairs and donair broiler equipment, Restaurant associations, Meat and food associations, Public health associations.
