Lobster Potato Salad

Lobster and potatoes together, sort of screams P.E.I. doesn't it?

Lobster Potato SaladIngredients:

  • 2 cups broken cooked lobster meat(may substitute frozen or canned)
  • 2 cups cold diced potatoes
  • 1/4 cup thinly sliced green onions
  • 1/3 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp horseradish
  • 1 tsp salt (taste)
  • 1/8 tsp pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp dry mustard

For garnish

  • lettuce
  • hard cooked eggs
  • pickle fans
  • small amount of lobster

Instructions:

Put lobster in a bowl.

Add potatoes and onions and toss lightly.

Mix mayonnaise,lemon juice, horseradish, salt pepper, dry mustard, and garlic powder. Pour over lobster mixture. Toss lightly again.

Cover and chill.

Line bowl with lettuce at serving time and pour in salad mixture.

Garnish with lobster claws, egg wedges and pickle fans.

Serves 4-6 but not large portions.

To Make Pickle Fans: Cut small gherkins into thin slices from one end to the other, nearly but not through to the other side. Spread slices into fan shape.

Geraldine adds a few ingredients to put some zip in this recipe.
