Geri Hall's Rum Sauce Recipe

1 cup white sugar
3 tablespoons unsalted butter, cut into pieces
1/3 cup water
1/4 cup dark rum
1/2 teaspoon cider vinegar
1/4 cup heavy cream

Episode 79 - 20/12/2007

It's the season to be good to your friends, family and yourself - so today on the show I'm going to splurge and get something I've always wanted. We'll show you everything you need to know before going under the needle.

Living Halifax tries to recreate the famous Rum Runners cake at home.

And we have everything you need to know about buying vodka and gin.

Bacardi rum Cake Recipe
1 c. chopped pecans or walnuts
1 pkg. (2 layer size) yellow cake mix
1 pkg. (4 serving size) Jello brand vanilla flavor instant pudding & pie filling
4 eggs
1/2 c. water
1/4 c. oil
1 cup sugar (for glaze)
1/2 c. Bacardi dark rum (80 proof)

Or use pudding included yellow cake mix; decrease water to 1/4 cup.
Sprinkle nuts evenly in bottom of 10 inch tube or fluted tube pan that has been greased and floured or sprayed with Pam pure vegetable cooking spray. Combine remaining ingredients in large mixer bowl. Blend, then beat at medium speed for 4 minutes. Pour into pan. Bake at 325 degrees for about 1 hour or until cake begins to pull away from sides of pan. DO NOT UNDERBAKE. Cool in pan 15 minutes. Prepare glaze. Invert cake onto serving plate. Prick with cake tester or wooden pick. Carefully spoon warm glaze over warm cake.

Glaze
Combine in saucepan:

1/2 c. butter
1/4 c. water
1 cup sugar

Stir until mixture comes to a boil; boil 5 minutes, stirring constantly. Stir in 1/2 cup rum; bring just to boil.
Hopefully your turns out better than ours!

Home Made Rug Cleaner Recipe
Mix Together:
1/4 cup of salt,
1/4 c Borax
1/4 c vinegar.

Rub paste into carpet and leave for a few hours. Vacuum and scrub if necessary.

Today on the show we're starting our week-long look at creative ways you can be good to your friends, family and yourself.

It's the season for giving so what better way to help someone than by giving the gift of blood. We'll show you how you can do it and meet someone who is passionate about being a donor.

Also, Gillian Grant and the battle of the bulge and Living Halifax's Jenn Adcock kicks off her 5 part series on spirits.

Guacamole Recipe
1. Peel and mash 4 avocados in a medium size bowl.
2. Finely chop 1 tomato and 2 green onions, 2 garlic cloves and 1 or 2 jalapenos. Add to avocado mixture.
3. Combine ingredients and mix until you achieve a smooth consistency
4. Season with salt and pepper to taste.
5. Add a bit of lemon juice and mix. This will stop it from going brown.
6. Serve with nacho chips or inside a warm tortilla!

Joy Knight and Michael Best try to de-mystify the moussaka - at home - it's quite a production! Musician Jill Barber and I spend some girl time together and you may know how to dress for cruising - but does your man?

Lamb Moussaka
Yield: 12

Ingredients:
Vegetable Layers
2 1/2 lb. eggplant, (3 large)
1 tbsp salt
1/4 cup olive oil
3 zucchini, sliced, 1/4 inch thick

Meat Sauce
2 lb. ground lamb
2 medium Onion, chopped
2 cloves garlic, chopped
1 tbsp dried oregano leaves
1 can diced tomatoes, undrained
1 can Tomato paste
1/2 cup dry red wine, optional
1/2 cup chopped fresh parsley
salt and pepper, to taste

White Sauce
1/3 cup butter
1/2 cup all purpose flour
4 cups Milk
1 tsp salt
4 egg, beaten
3 cups mozzarella cheese, shredded

Directions:
Vegetable Layers
CUT eggplant into 1/4” (5mm) thick slices. Layer in colander, sprinkling each layer with salt. Let stand 30 minutes.
RINSE eggplant; pat dry. Place in single layer on baking sheet. Brush with olive oil. Broil, turning once for 4 to 6 minutes on each side, until golden and softened. Set aside. Repeat until all eggplants are cooked. SAUTE zucchini in large oiled frying pan until tender-crisp. Set aside.

Meat Sauce
COOK lamb in large saucepan on high heat, breaking up with spoon, for 5 minutes. Drain off fat. Add onions, garlic and oregano. Cook on medium for 5 minutes. Add tomatoes, tomato paste and wine. Simmer 10 minutes, or until mixture starts to thicken. Stir in parsley, salt and pepper. Set aside.

White Sauce
MELT margarine in large saucepan. Add flour, mixing until smooth. Gradually add milk. Cook, stirring constantly until mixture comes to a boil and is thickened. Add salt and nutmeg. Add a bit of hot mixture to beaten eggs then return to saucepan and cook 2 minutes longer, stirring occasionally.

To Assemble
Tips: · Place pan on a baking sheet or piece of foil to catch any drips that may boil over. · MAKE-AHEAD: After assembling, cool completely, uncovered in refrigerator. Cover with plastic wrap and refrigerate for 1 day or overwrap with heavy foil and freeze up to 3 weeks. Thaw in refrigerator 48 hours before baking. · Replace lamb with beef. · A thin bottom layer of sautéed sliced potatoes can be added.

Thumb sized piece of ginger (peeled)

Stick them all in the juicer and drink up!

225 ml purified water
225 ml rubbing alcohol
2 tablespoons alum
3 tablespoons rose water

Mix the water, alcohol, alum and rose water together.

Transfer the mixture into a plastic spray bottle and use as you would any commercial antiperspirant
