Bobbi's Bread Pudding by Peter Skipp

Ingredients

  • 2 loaves of white bread -tear slices into bite sized pieces
  • 3/4 lb. brown sugar
  • 1/4 cup soft margarine
  • 2 eggs
  • 1 LB of mixture of dried fruit-raisins, currants, apricots,maraschino cherries, chopped walnuts
  • 2 tbs. marmalade
  • 2 tbs. ground allspice
  • 1 tbs. cinnamon
  • 1 tbs. nutmeg
  • 1/2 cup cream (10% is fine)


Instructions

Put bread in large mixing bowl and leave overnight to get stale. Once bread is stale, soak thoroughly with water, put aside.

In another large bowl mix together dried fruit, marmalade, allspice, cinnamon, nutmeg and cream.

Drain bread in collander, remove as much water as possible (use your hands to squeeze it out)

Add the other mixed ingredients to the bread and mix thoroughly.

Put mixture into greased 9x13 pan or pyrex dish, spread evenly.

Bake at 350 for 1 1/2 hours

Let cool so pudding becomes firm, before cutting.

Eat warm or cold with custard, ice cream or on its own.
